Chicken with eggplant «In Chinese»


Ingredients for 6 servings:
• 800 g fillet of chicken breast;
• 900 g aubergines;
• 60 ml soy sauce;
• 60 ml red wine vinegar;
• 3 tbsp. sugar;
• 1 tbsp grated fresh ginger;
• 1 tsp sesame seeds (optional);
• 2 tsp. corn starch (or 1 tsp. potato);
• 1 clove of garlic;
• red hot pepper on the tip of a knife.Chicken with eggplant "In Chinese"

Chicken with eggplant «In Chinese»

1. Chicken cut into long strips of width 1 see
2. Eggplant cut into long wedges.
3. In a few batches, fry chicken in vegetable oil on high heat until until the meat inside is no longer pink.
4. Remove to a plate and set aside.
5. Put in a pan, where roasted chicken, eggplant, add the ginger, garlic and 60 ml. of water, bring to the boil. Diminish the heat to medium, cover the pan with a lid and fry, stirring occasionally, until the liquid has evaporated and the eggplants are ready.
6. Fry the eggplant.
7. In a separate bowl mix soy sauce, vinegar, sesame seeds, flour, pepper and sugar.
8. Put the chicken on the frying pan to the eggplant, pour the soy mixture and on high heat bring to a boil. 9. Then reduce the fire and fry, stirring, until the sauce thickens.
10. The finished dish is best served with rice.
