Ingredients:

Fat duck — 2 kg
Bulb small — 1 pc.
Bulb large — 1 pc.
Celery stalk — 1 pc.
Bay leaf — 2 pcs.
Peas of black pepper — 10 pcs.
Garlic — 6 denticles
Thyme — 3-4 sprigs
Potatoes average — 3 pcs.
Cabbage — 200 g
Bacon (smoked-smoked or smoked-boiled brisket) — 100 g
Mixture of forest mushrooms -200 g
Champignons — 200 g
Granular mustard — 1 tbsp. L.
Salt — to taste
Cream 20% fat and above — 150 ml

Duck soup with cabbage and mushrooms

Preparation:

1. Prepare the broth. Cut the duck into pieces, cut the breast fillets and leave for another dish. Cut the largest and thickest pieces of skin and discard.
2. Put everything in a large saucepan, pour it with water so that it almost covers the contents and put on a strong fire. Bring to a boil, drain the water with foam, pan and duck pieces rinse under the tap to remove the remaining foam.
3. Return the duck to a saucepan, pour in 2.5 liters of water, put a small onion cut in a criss-cross, 2 crushed cloves of garlic, peppercorns, bay leaf, coarsely chopped celery and thyme. Add salt. Bring to a boil on high heat, then cook on minimal heat (broth should only slightly occasionally flip) about an hour and a half.
4. After an hour of cooking, remove the whole leg from the pan, after checking with a fork for softness.
5. Cut the potatoes into cubes, thinly chop the cabbage. Chop onion and bacon. Champignons cut into plates.
6. Remove the pieces of duck from the broth and allow them to cool slightly. Sam broth, strain. Return it to a saucepan and put on medium heat. Add potatoes and cabbage, cook for about 15 minutes.
7. In a frying pan over medium heat, heat 1 tbsp. L. Vegetable oil. Put onion and bacon and fry, stirring, 3-4 minutes.
8. Add finely chopped 4 cloves of garlic, and mushrooms and fry, stirring, for 3-4 more minutes.
9. Transfer the contents of the frying pan into the pan, add the mustard and cook until the potatoes and cabbage are ready. At the end, pour in the cream, bring to a boil and turn off. To taste and desire, add chopped herbs — parsley or dill.
