Turkish pilaf with bulgur and spinach

Ingredients:

Olive oil – 2 tbsp. L.
Average bulb – 1 piece
Garlic – 3 cloves
Canned tomatoes in own juice – 1 can
Bulgur coarse grinding – 1 stack.
Chicken or vegetable broth – 1 1/3 cup.
Fresh or frozen spinach – 450 g
Salt, pepper – to taste

For topping from caramelized onions:

Olive oil – 2 tbsp. L.
Large bulbs – 2 pcs.
Brown sugar – 1 tsp.
Cinnamon – 1/4 tsp.
Lemon juice – 1/4 pcs.
Greek yogurt (for serving) – to taste

Turkish pilaf with bulgur and spinach

Preparation:

1. Caramelize the onions. Slice the onion into thin slices. In a frying pan with preheated olive oil on medium heat, fry the onions, often stirring, until medium brown (15-20 minutes).
2. For a minute before cooking, add sugar and cinnamon to onions. Sprinkle with lemon juice and remove from heat.
3. While caramelized onions, finely chop onion and garlic. In a large cast-iron fryer in olive oil, over medium heat, fry the onion until it is clear, for about three minutes. Add the garlic and cook one more minute.
4. Add the tomatoes and cook for 3 more minutes.
5. Add bulgur and mix.
6. Add broth, salt and pepper, stir again. Bring to a boil, reduce the heat and cook under the lid on the lowest heat until the bulgur is ready (15-20 minutes).
7. Add spinach (if using frozen, defrost and squeeze water well, and if fresh, then hold for a few minutes in a hot pan until “wilting”). Stir, warm and remove from heat. Allow to stand for 10 minutes.
8. Serve with caramelized onions and a spoonful of Greek yogurt.
